Ingredients

For the chicken

  • 500 g boneless chicken breast, cut into bite-size pieces
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper

For the bowl

  • 2 cups cooked rice or quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives
  • ½ cup feta cheese, crumbled
  • ½ cup hummus
  • Fresh parsley, chopped
  • Lemon wedges
  • Quick tzatziki
  • ½ cup Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 small garlic clove, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or parsley
  • Salt to taste

Method

1. Marinate the chicken: Mix chicken with olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Let it marinate for 15–30 minutes.

2. Cook the chicken: Heat a large skillet over medium-high heat. Cook the chicken for 6–8 minutes, turning occasionally, until golden brown and cooked through. Chicken should reach 74°C/165°F internally.

3. Make the tzatziki: Mix Greek yogurt, grated cucumber, garlic, lemon juice, herbs, and salt. Chill until ready to serve.

4. Build the bowls: Divide cooked rice or quinoa between 4 bowls. Arrange chicken, cucumber, tomatoes, red onion, olives, feta, and hummus on top.

5. Finish: Add a generous spoonful of tzatziki, sprinkle with fresh parsley, and serve with lemon wedges.
