Ingredients

  • 115 g (½ cup) unsalted butter
  • 170 g (1 cup) semi-sweet or dark chocolate, chopped
  • 2 large eggs
  • 2 egg yolks
  • ¼ cup (50 g) granulated sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp all-purpose flour
  • Butter and cocoa powder, for greasing ramekins
  • Powdered sugar, for serving
  • Fresh berries or vanilla ice cream, optional

👩‍🍳 Method

1. Prepare the ramekins: Preheat oven to 220°C (425°F). Grease 4 small ramekins with butter and dust lightly with cocoa powder.

2. Melt chocolate: Melt the butter and chopped chocolate together in a microwave in 20–30 second intervals, stirring between each, or use a double boiler. Stir until smooth.

3. Whisk eggs: In a bowl, whisk the eggs, egg yolks, sugar, vanilla, and salt for about 1–2 minutes, until slightly thickened.

4. Combine: Slowly whisk the melted chocolate mixture into the egg mixture. Gently fold in the flour until just combined. Don’t overmix.

5. Fill ramekins: Divide the batter evenly among the 4 ramekins.

6. Bake: Bake for 10–12 minutes. The edges should be firm while the centers remain soft and slightly jiggly.

7. Rest: Let the cakes stand for 1 minute. Carefully run a thin knife around the edges and invert each cake onto a serving plate.

8. Serve: Dust with powdered sugar and serve immediately with vanilla ice cream, berries, or whipped cream.

Secret to the Perfect Lava Center

Don’t overbake! The exact baking time depends on your ramekin size and oven. The outside should look set while the center still has a slight wobble.
