📝 Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ cup all-purpose flour, for lightly coating
  • 2 tbsp olive oil
  • 2 tbsp butter

For the Creamy Sauce:

  • 3–4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes, optional
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 1 tbsp fresh basil or parsley, chopped

1. Prepare the chicken

Pat the chicken breasts dry. Season both sides with salt, black pepper, Italian seasoning, and paprika. Lightly coat each piece with flour and shake off the excess.

2. Sear the chicken

Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for about 4–5 minutes per side, until golden brown. Remove the chicken and set aside. It does not need to be completely cooked through yet.

3. Make the garlic-tomato base

Using the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1 minute, until fragrant.

4. Make the creamy sauce

Pour in the chicken broth and scrape up the flavorful browned bits from the bottom of the pan. Add the heavy cream, Parmesan, Italian seasoning, paprika, and red pepper flakes. Stir well and let the sauce gently simmer for 2–3 minutes.

5. Return the chicken

Place the chicken breasts back into the skillet. Spoon the sauce over the chicken and reduce the heat to medium-low.

Cover loosely and simmer for 8–12 minutes, or until the chicken reaches an internal temperature of 165°F / 74°C and the sauce has thickened.

6. Finish and serve

Taste and adjust the seasoning. Sprinkle with fresh basil or parsley and extra Parmesan if desired.
