Ingredients

12 oz penne or fusilli pasta

8 oz halloumi cheese, sliced

2 medium zucchini, sliced into ribbons or rounds

1 cup cherry tomatoes, halved

2 tablespoons olive oil

2 garlic cloves, minced

Juice of 1 lemon

2 tablespoons fresh parsley, chopped

1 teaspoon dried oregano

Salt and black pepper, to taste

Kalamata olives

Spinach

Roasted red peppers

Fresh basil

Chili flakes

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil.

Cook the pasta until al dente according to package directions.

Drain and set aside, reserving a little pasta water.

2. Grill the Halloumi & Zucchini

Heat a grill pan or skillet over medium-high heat.

Brush the halloumi and zucchini lightly with olive oil.

Cook the zucchini for 2–3 minutes per side until tender and lightly charred.

Grill the halloumi for about 1–2 minutes per side until golden.

3. Make the Dressing

In a small bowl, whisk together:

olive oil

garlic

lemon juice

oregano

black pepper

4. Toss Everything Together

In a large bowl, combine:

cooked pasta

grilled zucchini

cherry tomatoes

parsley

Pour over the dressing and toss gently.

Add a splash of pasta water if needed.

Top with the grilled halloumi.

5. Serve

Serve warm or at room temperature.

Finish with extra parsley, lemon zest, and a pinch of chili flakes if desired.
