Ingredients

For the Chicken

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon dried oregano

For the Filling

2 cups fresh spinach, chopped

½ cup feta cheese, crumbled

2 garlic cloves, minced

2 tablespoons cream cheese or Greek yogurt

1 tablespoon fresh parsley, chopped

Instructions

1. Prepare the Chicken

Preheat your oven to 400°F (200°C).

Using a sharp knife, carefully cut a pocket into the side of each chicken breast.

Season both sides with:

paprika

oregano

salt

pepper

2. Make the Filling

In a bowl, combine:

spinach

feta cheese

garlic

cream cheese or Greek yogurt

parsley

Mix until well combined.

3. Stuff the Chicken

Spoon the spinach mixture into each chicken breast pocket.

Secure with toothpicks if needed.

Place the chicken in a lightly greased baking dish.

4. Bake

Brush the tops with olive oil.

Bake for 22–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

For a golden top, broil for the last 2 minutes if desired.

5. Serve

Let the chicken rest for 5 minutes before serving.
