This is a batch of crispy, savory Parmesan Crisps (also known as Fricos). They are incredibly simple to make and work perfectly as a standalone snack, a salad topper, or a low-carb alternative to crackers.

Crispy Black Pepper Parmesan Crisps

Prep time: 5 minutes

 

Cook time: 5–7 minutes

 

Yields: Approx. 12–15 crisps

 

Ingredients

1 cup High-quality Parmesan cheese (freshly grated is best; avoid the powdered “shaker” cans as they won’t melt properly).

 

1/2 tsp Freshly cracked black pepper (coarse grind).

 

Optional: A pinch of garlic powder or smoked paprika for extra depth.

 

Instructions

Preheat & Prep:

Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper or a silicone baking mat. This is crucial—otherwise, they will stick!

 

Mound the Cheese:

Spoon the grated Parmesan onto the baking sheet in small mounds (about 1 tablespoon each). Space them at least 2 inches apart, as they will spread while melting.

 

Flatten & Season:

Lightly pat the mounds down with the back of a spoon to level them out. Sprinkle the freshly cracked black pepper (and optional spices) evenly over each circle.

 

Bake:

Place in the oven for 5 to 7 minutes. Watch them closely! They are done when the centers are bubbly and the edges turn a golden brown. If they get too dark, they can taste bitter.

 

Cool & Set:

Remove from the oven and let them sit on the baking sheet for 2 to 3 minutes. They will be soft at first but will become crisp and rigid as they cool.
