Ingredients

For the Soup

  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1–2 tablespoons chili crisp or chili oil
  • 1 teaspoon honey
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions, sliced
  • 1/2 teaspoon crushed red pepper flakes, optional
  • 12–16 frozen dumplings or potstickers

  • Sesame seeds
  • Fresh cilantro
  • Extra chili crisp
  • A drizzle of sesame oil

Instructions

1. Build the Flavor Base

Heat sesame oil in a large pot over medium heat. Add the minced garlic and grated ginger. Cook for about 30–60 seconds, stirring constantly, until fragrant. Be careful not to burn the garlic.

2. Make the Spicy Broth

Pour in the chicken or vegetable broth. Add soy sauce, rice vinegar, honey, chili crisp, and crushed red pepper flakes if using.

Stir well and bring the broth to a gentle simmer. Allow it to simmer for 3–4 minutes so the garlic, ginger, and chili flavors infuse the broth.

3. Add the Vegetables

Add the sliced mushrooms and cook for approximately 2–3 minutes, until they begin to soften.

Stir in the baby spinach and let it wilt into the broth.

4. Cook the Dumplings

Carefully add the frozen dumplings directly into the simmering soup. Cook according to the dumpling package instructions, usually 4–6 minutes, until the dumplings are tender and heated through.

Avoid aggressively stirring the soup while the dumplings cook, as this can cause them to break apart.

5. Finish the Soup

Taste the broth and adjust the seasoning. Add more chili crisp for extra heat, soy sauce for saltiness, or rice vinegar for additional brightness.

Ladle the soup into bowls and garnish generously with sliced green onions, sesame seeds, cilantro, and a small spoonful of chili crisp.

Serving

Serve immediately while piping hot. For an extra hearty meal, add shredded chicken, bok choy, shredded carrots, or cooked noodles.
