Sheet Pan Garlic Herb Baked Fish
Ingredients
4 white fish fillets (cod, haddock, tilapia, or halibut), about 6 oz each
2 cups broccoli florets
1 cup cherry tomatoes
1 small zucchini, sliced
4 cloves garlic, minced
3 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice
1 tsp dried oregano
1 tsp dried thyme
½ tsp paprika
½ tsp salt
¼ tsp black pepper
1 lemon, sliced
2 tbsp chopped fresh parsley
Instructions
1. Prepare the oven:
Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper for easier cleanup.
2. Season the vegetables:
Place broccoli, cherry tomatoes, and zucchini on the pan. Drizzle with 1½ tablespoons olive oil and season lightly with salt and pepper. Toss to coat. Spread vegetables into an even layer.
3. Make the garlic herb mixture:
In a small bowl, combine remaining olive oil, minced garlic, lemon juice, oregano, thyme, paprika, salt, and black pepper.
4. Add the fish:
Pat the fish fillets dry with paper towels. Place them among the vegetables. Spoon the garlic herb mixture generously over each fillet and top with lemon slices.
5. Bake:
Bake for approximately 12–16 minutes, depending on the thickness of the fish. The fish is ready when it flakes easily with a fork and reaches 145°F (63°C) internally.
6. Finish and serve:
Remove from the oven and sprinkle with fresh parsley. Add an extra squeeze of lemon before serving.
