Chia Pudding
- 3 tablespoons chia seeds
- 1 cup milk
(almond, oat, coconut, or dairy) - 1–2 teaspoons maple syrup or honey
- ½ teaspoon vanilla extract
Lemon Layer
- ⅓ cup lemon curd
- ¼ cup Greek yogurt or whipped coconut cream
- 1 teaspoon lemon zest
Instructions
- Prepare chia pudding
Mix chia seeds, milk, sweetener, and vanilla in a jar or bowl.
Stir well, wait 10 minutes, then stir again to prevent clumps. - Chill
Refrigerate at least 4 hours or overnight until thickened. - Make lemon cream
Stir together lemon curd, yogurt, and lemon zest until smooth. - Assemble
Spoon chia pudding into serving glasses and top with the lemon mixture. - Serve cold
Garnish with extra zest, berries, or crushed graham crackers if desired.

Quick Homemade Lemon Curd
If you want to make your own:
- 2 egg yolks
- ⅓ cup sugar
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons butter
Cook gently over low heat until thickened, then chill.
