Lemon Curd Chia Pudding

Chia Pudding

  • 3 tablespoons chia seeds
  • 1 cup milk
    (almond, oat, coconut, or dairy)
  • 1–2 teaspoons maple syrup or honey
  • ½ teaspoon vanilla extract

Lemon Layer

  • ⅓ cup lemon curd
  • ¼ cup Greek yogurt or whipped coconut cream
  • 1 teaspoon lemon zest

Instructions

  1. Prepare chia pudding
    Mix chia seeds, milk, sweetener, and vanilla in a jar or bowl.
    Stir well, wait 10 minutes, then stir again to prevent clumps.
  2. Chill
    Refrigerate at least 4 hours or overnight until thickened.
  3. Make lemon cream
    Stir together lemon curd, yogurt, and lemon zest until smooth.
  4. Assemble
    Spoon chia pudding into serving glasses and top with the lemon mixture.
  5. Serve cold
    Garnish with extra zest, berries, or crushed graham crackers if desired.

Quick Homemade Lemon Curd

If you want to make your own:

  • 2 egg yolks
  • ⅓ cup sugar
