For the Crust
- 2 cups graham cracker crumbs

- 2 packages (8 oz each) cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/2 cup sour cream

👩🍳 Instructions
- Preheat oven to 175°C (350°F).
- Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and sugar.
- Press the crust mixture firmly into the pan.
- Bake crust for 8 minutes, then cool slightly.
- In a bowl, beat cream cheese until smooth and creamy.
- Add sugar and mix well.
- Beat in eggs one at a time.
- Add vanilla, lemon juice, lemon zest, and sour cream.
- Pour filling over the crust evenly.
- Bake for 30–35 minutes until center is just set.
- Cool completely, then refrigerate for at least 3 hours.
- Slice into squares and serve chilled.
