Glazed Lemon Loaf Cake 🍋🍰
Ingredients
For the Cake
- 1 cup unsalted butter, softened
- 1 ½ cups sugar
- 4 eggs
- 2 tbsp lemon zest
- ¼ cup fresh lemon juice
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup milk
- 1 tsp vanilla extract
For the Lemon Glaze
- 1 cup powdered sugar
- 2–3 tbsp fresh lemon juice
- Extra lemon zest for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan well.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in lemon zest, lemon juice, and vanilla extract.
- In another bowl, whisk flour, baking powder, and salt.
- Add dry ingredients to the wet mixture alternately with milk. Mix until smooth.
- Pour batter into the loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool for 15 minutes before removing from the pan.
- For the glaze, mix powdered sugar with lemon juice until smooth. Pour over cooled cake.
- Sprinkle extra lemon zest on top and serve. 🍋✨
