For the Salmon
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
For the Creamy Sauce
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- Β½ cup grated Parmesan cheese
- Β½ teaspoon Italian seasoning
- Salt and black pepper, to taste

1. Season the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt, black pepper, paprika, and garlic powder.
2. Cook the Salmon
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Place the salmon skin-side down and cook for about 4β5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
3. SautΓ© the Mushrooms
In the same skillet, melt 2 tablespoons of butter. Add sliced mushrooms and cook for 3β4 minutes until soft and lightly browned.
4. Add Garlic & Spinach
Stir in the minced garlic and cook for 30 seconds until fragrant. Add spinach and cook until wilted.
5. Make the Creamy Sauce
Pour in the heavy cream and stir well. Add Parmesan cheese and Italian seasoning. Simmer for 2β3 minutes until the sauce thickens slightly.
6. Combine Everything
Return the salmon fillets to the skillet. Spoon the creamy mushroom sauce over the salmon and simmer for 2 minutes.
7. Serve
Garnish with chopped parsley if desired. Serve hot with rice, mashed potatoes, pasta, or roasted vegetables.
