Buttermilk Cornbread Recipe

 

Ingredients

• 2 cups cornmeal (300g)

• 1 cup all-purpose flour (125g)

• ½ cup granulated sugar (100g)

• 1 tbsp baking powder

• ½ tsp baking soda

• ½ tsp salt

• 2 large eggs

• 2 cups buttermilk (480ml)

• ½ cup melted butter (113g)

• 2 tbsp vegetable oil

Instructions

Preheat oven to 190°C (375°F).

Grease an 8-inch or 9-inch baking pan.

In a large bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together eggs, buttermilk, melted butter, and vegetable oil.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Do not overmix.

Pour batter into the prepared baking pan and smooth the top.

Bake for 25–30 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Allow to cool slightly before slicing.

Serve warm with butter, honey, or jam.
