Mediterranean Baked White Fish with Tomatoes, Olives, and Cabbage

Ingredients
4 white fish fillets, such as cod, haddock, or tilapia
4 cups thinly sliced green cabbage
2 medium tomatoes, chopped
½ cup Kalamata olives, pitted
3 garlic cloves, minced
3 tablespoons extra-virgin olive oil
1 lemon, thinly sliced
1 teaspoon dried oregano
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Prepare the Oven: Preheat oven to 400°F (200°C). Lightly grease a large baking dish with olive oil.
Season the Vegetables: Add sliced cabbage, tomatoes, olives, and garlic to the baking dish. Drizzle with 1½ tablespoons olive oil and season with oregano, salt, and pepper. Toss gently.
Prepare the Fish: Pat the fish fillets dry with paper towels. Season both sides with paprika, a little salt, black pepper, and the remaining olive oil.
Assemble: Place the fish fillets over the cabbage mixture. Arrange lemon slices around and on top of the fish.
Bake: Cover loosely with foil and bake for 15 minutes. Remove the foil and continue baking for 8–10 minutes, or until the fish flakes easily and reaches 145°F (63°C) internally.
Garnish: Sprinkle with fresh parsley and drizzle with a little fresh lemon juice before
