🥗 4 Healthy Weight-Loss Friendly Recipes

1. 🌿 Crispy Roasted Broccoli with Green Chutney

Ingredients

  • 2 cups broccoli florets
  • 2 tbsp yogurt
  • 1 tbsp gram flour (besan)
  • 1 tsp ginger-garlic paste
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp red chili powder
  • ¼ tsp turmeric
  • ½ tsp garam masala
  • Salt to taste
  • 1 tsp oil
  • Lemon juice
  • Green Chutney
  • 1 cup fresh coriander
  • ½ cup mint
  • 1 green chili
  • ½-inch ginger
  • 1 tbsp lemon juice
  • Salt
  • 2–3 tbsp water

Method

1. Wash and completely dry the broccoli.

2. Mix yogurt, besan, spices, ginger-garlic paste, salt and oil.

3. Add broccoli and coat well.

4. Arrange on a lined baking tray.

5. Bake at 200°C for 18–25 minutes, turning once, until golden and crisp.

6. Blend all chutney ingredients until smooth.

7. Serve hot broccoli with green chutney and lemon.

2. 🟡 Healthy Moong Dal Vegetable Bites

Ingredients

  • 1 cup yellow moong dal
  • 1 small onion, chopped
  • 1 small carrot, grated
  • ½ cup spinach, finely chopped
  • 1 green chili
  • ½-inch ginger
  • ½ tsp cumin
  • ½ tsp turmeric
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • Salt to taste
  • 2 tbsp coriander
  • 1–2 tsp oil

Method

1. Soak moong dal for 3–4 hours.

2. Drain and blend with ginger and green chili into a thick, slightly coarse batter.

3. Mix in onion, carrot, spinach, coriander and spices.

4. Heat a non-stick pan and lightly grease it.

5. Shape small portions of the mixture into round patties.

6. Cook on medium-low heat for 3–4 minutes per side until golden.

7. Serve with mint chutney or yogurt.

Tip: You can air-fry them at 190°C for about 12–15 minutes, turning halfway.

3. 🥕 Healthy Vegetable Poha

Ingredients

  • 1½ cups thick poha
  • ½ cup green peas
  • 1 small carrot, finely chopped
  • 1 small onion, chopped
  • 2 tbsp roasted peanuts
  • 1 green chili, chopped
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 6–8 curry leaves
  • ¼ tsp turmeric
  • Salt to taste
  • 1 tsp oil
  • 1 tbsp lemon juice
  • Fresh coriander

Method

1. Place poha in a strainer and rinse gently.

2. Let it drain for 5–7 minutes.

3. Heat oil in a pan.

4. Add mustard seeds, cumin and curry leaves.

5. Add onion and green chili; sauté for 2 minutes.

6. Add carrot and peas and cook until tender.

7. Add turmeric and salt.

8. Add the softened poha and mix gently.

9. Cook for 2–3 minutes.

10. Add peanuts, coriander and lemon juice.

11. Serve warm.

For a lighter version, keep peanuts and oil moderate while adding extra vegetables.

4. 🥞 High-Protein Moong Dal Cheela

Ingredients

  • 1 cup yellow moong dal
  • ½-inch ginger
  • 1 green chili
  • ½ tsp cumin
  • ½ small onion, finely chopped
  • 2 tbsp coriander
  • ¼ cup grated carrot or chopped spinach
  • ¼ tsp turmeric
  • Salt to taste
  • Water as needed
  • 1–2 tsp oil

Method

1. Soak moong dal for 3–4 hours.

2. Drain and blend with ginger, green chili and cumin.

3. Add enough water to make a smooth, pourable batter.

4. Mix in onion, coriander, vegetables, turmeric and salt.

5. Heat a non-stick tawa.

6. Pour one ladle of batter and spread into a thin circle.

7. Drizzle a few drops of oil around the edges.

8. Cook until the bottom becomes golden.

9. Flip and cook the other side.

10. Serve hot with mint chutney or plain yogurt.

Moong-dal cheela is a popular protein-rich vegetarian breakfast and can be made with very little oil.
