30-Minute Egg Bites

Ingredients

6 large eggs

1/4 cup milk (or heavy cream for extra richness)

1/2 cup shredded cheese (cheddar, mozzarella, or Swiss)

1/4 cup diced bell peppers (red and green)

2 tablespoons chopped green onions

A pinch of salt and black pepper

Optional: 1/4 cup cooked, crumbled bacon or diced ham

Preheat & Prep: Heat your oven to 350°F (175°C). Generously grease a standard muffin tin with cooking spray or butter to prevent sticking.

Whisk the Base: In a large bowl, whisk the eggs, milk, salt, and black pepper together until smooth, light, and slightly frothy.

Layer the Fillings: Divide your diced bell peppers, green onions, cheese, and optional meat evenly among the muffin cups.

Pour the Eggs: Carefully pour the whisked egg mixture over the fillings in each cup, filling them about 3/4 of the way full. Give each a gentle stir with a toothpick to distribute the ingredients.

Bake: Place the tin in the oven and bake for 18 to 20 minutes. The egg bites should be puffed up, set in the center, and lightly golden on the edges.

Cool & Serve: Remove from the oven and let them cool in the pan for 5 minutes. Run a butter knife around the edges to gently pop them out.
Tip: Enjoy them warm, or let them cool completely and store them in an airtight container in the fridge for an easy, grab-and-go weekday breakfast!
