Ingredients

  • 3 medium zucchini
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella, divided
  • 1 garlic clove, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ cups marinara sauce
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh basil

Instructions

  1. Prepare the Zucchini: Preheat the oven to 400°F (200°C). Slice the zucchini lengthwise into thin strips, about ⅛-inch thick. Lightly brush both sides with olive oil.
  2. Roast: Arrange the zucchini slices on a baking sheet and roast for 8–10 minutes, just until flexible. Avoid overcooking, or they may become difficult to roll.
  3. Make the Filling: In a bowl, combine ricotta, Parmesan, ½ cup mozzarella, garlic, Italian seasoning, salt, and black pepper. Mix until creamy and well combined.
  4. Roll: Spread a spoonful of the cheese mixture over each zucchini slice. Carefully roll each slice into a neat spiral.
  5. Bake: Spread marinara sauce across the bottom of a baking dish. Place the zucchini rolls seam-side down over the sauce. Top with the remaining mozzarella.
  6. Finish: Bake for 15 minutes, or until the cheese is melted and lightly golden. Garnish with fresh basil and serve warm.

Tips

For easier rolling, choose medium-sized zucchini with a similar thickness. Pat the zucchini dry after roasting to prevent watery rolls. Add spinach, cooked ground turkey, mushrooms, or red pepper flakes to the filling for extra flavor.
