Tuna & Sweetcorn Sandwiches
Ingredients

Tuna: 1 can (approx. 160g) tuna in chunks, well-drained

Sweetcorn: 3-4 tablespoons canned sweetcorn kernels, drained

Mayonnaise: 3 tablespoons (adjust for desired creaminess)

Seasoning: A pinch of salt and freshly cracked black pepper

Bread: 4 slices of soft white or wholemeal bread, crusts removed

Butter: Optional, for spreading

Prep the Filling: In a medium mixing bowl, flake the drained tuna using a fork until no large chunks remain.

Mix: Add the sweetcorn kernels and mayonnaise to the bowl. Season with a pinch of salt and black pepper. Stir thoroughly until the mixture is completely combined and creamy.

Assemble: If using butter, lightly spread a thin layer across one side of each bread slice. Evenly divide the tuna and sweetcorn mixture between two slices of bread, spreading it right to the edges.

Finish: Top with the remaining bread slices and press down gently. Using a sharp knife, slice each sandwich diagonally into neat triangles.
Serve immediately with a few loose sweetcorn kernels scattered on the plate for presentation, or wrap tightly to enjoy later.
