Sweet Potato-Carrot Crispy Fritters

You’ll need
Fritters:
- 2 medium sweet potatoes,
- 1 carrot grated,
- 1 small onion finely chopped,
- 2 tbsp besan/maida,
- 1 tsp red chili flakes,
- ½ tsp salt, handful coriander + spring onions,
- 1 egg or 2 tbsp curd for binding
Dip:
- ½ cup thick curd/hung curd,
- 1 tsp honey,
- pinch salt,
- chili flakes,
- coriander
Other:
- Oil for shallow fry,
- lemon wedges
Quick steps
Boil + mash: Boil sweet potato, peel, mash. Squeeze out extra water.
Mix: Add grated carrot, onion, besan, chili flakes, salt, coriander. Add egg/curd. Mix till it holds shape.
Shape: Make small round patties. Chill 10 mins if mix feels soft.
Crisp up: Heat 2-3 tbsp oil on medium. Shallow fry 3-4 mins each side till deep golden and crunchy.
Dip: Whisk curd + honey + salt. Top with chili flakes + coriander.
Serve: Hot with lemon wedges. Sprinkle sea salt + coriander on top like the pic.
Tip: Air fryer works too. 180°C for 12-14 mins, flip once.
