Spinach + Feta Cookies
Ingredients
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried oregano
½ cup finely chopped fresh spinach
½ cup crumbled feta cheese
¼ cup grated Parmesan cheese
1 large egg
4 tablespoons melted butter
1 small garlic clove, finely minced
1 tablespoon chopped fresh parsley
Instructions
1. Prepare the oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Prepare the dry ingredients:
In a medium bowl, whisk together flour, baking powder, salt, black pepper, and oregano.
3. Mix the wet ingredients:
In another bowl, whisk the egg with melted butter and minced garlic. Stir in the chopped spinach, feta, Parmesan, and parsley.
4. Make the dough:
Gradually add the dry ingredients to the spinach mixture. Stir gently until a soft, slightly sticky dough forms. Do not overmix.
5. Shape the cookies:
Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each one. Gently flatten each portion with your fingers or the back of a spoon.
6. Bake:
Bake for 15–18 minutes, or until the edges are lightly golden and the centers are set.
7. Cool and serve:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Serve warm or at room temperature.
