Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp sugar

White Cheesecake Layer

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping or whipped cream

Mango Cheesecake Layer

  • 8 oz cream cheese
  • 1/2 cup mango puree
  • 1/4 cup powdered sugar
  • 1 tsp lemon juice
  • 1 tsp gelatin dissolved in 2 tbsp warm water
  • 1 cup whipped topping

Strawberry Cheesecake Layer

  • 8 oz cream cheese
  • 1/2 cup strawberry puree
  • 1/4 cup powdered sugar
  • 1 tsp lemon juice
  • 1 tsp gelatin dissolved in 2 tbsp warm water
  • 1 cup whipped topping

Topping

  • Fresh mango cubes
  • Mint leaves
  • Fresh strawberries (optional)

Instructions

1. Prepare the Crust

  • Mix graham cracker crumbs, melted butter, and sugar.
  • Press firmly into the bottom of a springform pan.
  • Chill in the refrigerator for 20 minutes.

2. Make the White Layer

  • Beat cream cheese until smooth.
  • Add powdered sugar and vanilla.
  • Fold in whipped topping gently.
  • Spread over the crust and refrigerate for 20 minutes.

3. Make the Mango Layer

  • Beat cream cheese until creamy.
  • Mix in mango puree, powdered sugar, and lemon juice.
  • Add dissolved gelatin.
  • Fold in whipped topping.
  • Spread carefully over the white layer.
  • Chill for 20–30 minutes.

4. Make the Strawberry Layer

  • Beat cream cheese until smooth.
  • Add strawberry puree, powdered sugar, and lemon juice.
  • Mix in dissolved gelatin.
  • Fold in whipped topping.
  • Spread on top of mango layer evenly.

5. Chill

  • Refrigerate the cheesecake for at least 6 hours or overnight until fully set.

6. Decorate & Serve

  • Top with diced mango, strawberries, and mint leaves.
  • Slice and enjoy cold!
