Mushroom Grilled Cheese
Serves 1, 15 mins
You need:
Bread: 2 thick slices, sourdough works best
Mushrooms: 1 cup sliced, button or cremini
Cheese: 1.5 cups shredded mozzarella + cheddar, or havarti
Butter: 2 tbsp softened
Flavor: 1 small garlic clove minced, 1 tsp thyme, salt + pepper
How to make:
Cook mushrooms: Pan on med heat, 1 tbsp butter. Toss mushrooms 4-5 mins till brown. Add garlic, thyme, salt/pepper. 1 min more. Set aside.
Butter bread: Spread butter on outside of both slices.
Assemble: Bread butter-side down → cheese → mushrooms → more cheese → bread butter-side up. More cheese = more pull 😄
Grill: Same pan on low-med heat. 3-4 mins each side till golden + cheese melts. Press lightly with spatula.
Rest 1 min then cut. Done.
Pro tip: Low heat = no burnt bread + fully melted cheese. Add caramelized onions if you’ve got time.
