Ingredients

  • 2 cups grated carrots
  • 2 eggs
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • ½ cup raisins
  • ½ cup cashews or nuts
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a round cake pan.
  3. In a bowl, whisk eggs and sugar until smooth.
  4. Add oil and vanilla extract, then mix well.
  5. Stir in grated carrots and raisins.
  6. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  7. Gradually add dry ingredients into the wet mixture.
  8. Pour batter into the prepared pan.
  9. Top with cashews and extra raisins.
  10. Bake for 35–45 minutes or until a toothpick comes out clean.
  11. Let cool before slicing and serving.
