Kosher salt: 1 tsp
Black pepper: ½ tsp

For the salad:
English cucumber: 1 large, sliced ¼-inch — or 2 Persian cukes
Cherry tomatoes: 1 cup, halved — red + yellow for color like your photo
Red onion: ⅓ cup, thinly sliced
Fresh dill: ⅓ cup, chopped + sprigs for garnish
Fresh parsley: 2 tbsp, chopped
Kalamata olives: ¼ cup, halved — optional but makes it Mediterranean

For the tzatziki dressing:
Greek yogurt: 1 cup, full-fat 5% — thick = better
Grated cucumber: ⅓ cup, squeezed dry — key to real tzatziki flavor
Garlic: 2 cloves, finely grated
Lemon juice: 1½ tbsp, fresh
Extra virgin olive oil: 1 tbsp
Fresh dill: 2 tbsp, chopped
Red wine vinegar: 1 tsp

Method

Make the tzatziki dressing — 5 min
Grate cucumber on box grater. Wrap in towel + squeeze out ALL the water. You want it dry or dressing gets watery.

Prep the veggies — 5 min
Slice cukes. Toss with ½ tsp salt in colander. Let sit 10 min, pat dry.
Ice bath for red onion 5 min to kill the bite. Drain well. Halve tomatoes.

Assemble — 3 min
Large bowl: chicken, salted cucumbers, tomatoes, red onion, olives if using, parsley, half the fresh dill.
Pour tzatziki dressing over. Toss gently. Top with remaining dill sprigs.
