Glossy Ginger Soy Cod Fillets
Ingredients
- 4 cod fillets, about 6 oz each
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon fresh ginger, finely grated
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1 tablespoon water
- 1 tablespoon olive oil
- 1 teaspoon sesame seeds
- 2 green onions, thinly sliced
- Black pepper, to taste
- Lemon wedges, for serving
Instructions
Pat the cod fillets dry with paper towels and season lightly with black pepper. In a small bowl, whisk together the soy sauce, honey, grated ginger, garlic, rice vinegar, and sesame oil. In another small bowl, mix the cornstarch with water until smooth.
Heat olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3–4 minutes on the first side, until lightly golden. Carefully flip the fish and cook for another 2–3 minutes.
Pour the ginger-soy sauce over the cod and reduce the heat to medium-low. Allow the sauce to simmer gently for 2–3 minutes, spooning it over the fillets as they cook. Stir in the cornstarch mixture and continue cooking for another 1–2 minutes, until the sauce becomes thick, glossy, and beautifully coats the fish.
The cod should be opaque in the center and flake easily with a fork. Avoid overcooking so the fillets remain tender and juicy.
