Crispy Cabbage and Egg Fritters

Crispy Cabbage and Egg Fritters

Description

Crispy Cabbage and Egg Fritters are an easy, budget-friendly dish made with finely shredded cabbage, eggs, herbs, and simple seasonings. They are golden and crispy on the outside while remaining tender and flavorful inside.

These fritters make a delicious breakfast, light lunch, appetizer, or side dish. Serve them warm with sour cream, Greek yogurt, garlic sauce, or your favorite dipping sauce.

Ingredients

  • 4 cups finely shredded cabbage
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, finely sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil, plus more as needed

Instructions

1. Prepare the Cabbage

Place the shredded cabbage in a large bowl. Sprinkle lightly with salt and let it sit for about 5 minutes.

Squeeze the cabbage gently to remove excess moisture. This helps the fritters become crisp instead of soggy.

2. Make the Batter

Add the eggs, flour, Parmesan, green onions, garlic, parsley, paprika, and black pepper to the cabbage.

Mix thoroughly until everything is evenly combined and the mixture holds together when pressed.

3. Cook the Fritters

Heat olive oil in a large nonstick skillet over medium heat.

Scoop about 2–3 tablespoons of the cabbage mixture into the skillet for each fritter. Flatten gently with the back of a spoon.

Cook for approximately 3–4 minutes per side, or until golden brown and crispy.

Work in batches and avoid overcrowding the skillet.

4. Drain and Serve

Transfer the cooked fritters to a paper towel-lined plate to absorb excess oil.

Serve immediately while hot and crispy.

Tips

For extra crispiness, make sure the cabbage is well drained before mixing the batter. You can add shredded carrot, zucchini, or fresh dill for additional flavor.

For a spicy version, add red pepper flakes or a pinch of cayenne.

A nonstick skillet helps prevent sticking and allows you to use less oil.
