Crispy Baked Hot Honey Goat Cheese Chicken Pita with Garlic Sauce Drizzle
Ingredients
2 boneless, skinless chicken breasts
1/2 cup all-purpose flour
2 eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste
Cooking spray or 2 tablespoons olive oil
2–3 pita breads, warmed
1 cup shredded lettuce
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
Hot Honey Drizzle
3 tablespoons honey
1 teaspoon chili flakes
1 tablespoon lemon juice
Garlic Sauce
1/2 cup Greek yogurt
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon lemon juice
Salt and black pepper to taste
Topping
1/2 cup goat cheese, crumbled
Fresh parsley for garnish
Directions
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
Slice chicken into cutlets and season with salt and pepper.
Dredge in flour, dip in eggs, then coat in panko mixed with Parmesan, paprika, and garlic powder.
Place on baking sheet, spray lightly with oil, and bake for 20–25 minutes until crispy and golden.
Mix honey, chili flakes, and lemon juice for the hot honey drizzle.
In a bowl, combine Greek yogurt, garlic, olive oil, lemon juice, salt, and pepper to make garlic sauce.
Warm pita breads.
Fill with crispy chicken, lettuce, tomatoes, cucumber, and goat cheese.
Drizzle with hot honey and garlic sauce.
Garnish with fresh parsley and serve immediately.
