Creamy Red Onion Potato Salad 🥔🧅

Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 small red onion, chopped
  • 2 green onions, sliced
  • 1 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon mustard
  • 1 tablespoon lemon juice or vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 boiled eggs, chopped (optional)
  • Fresh parsley for garnish

Instructions

  1. Boil diced potatoes in salted water until tender, about 10–12 minutes.
  2. Drain and let cool completely.
  3. In a large bowl, mix mayonnaise, sour cream, mustard, lemon juice, salt, pepper, and paprika.
  4. Add potatoes, red onion, green onions, and boiled eggs.
  5. Gently mix until everything is well coated.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. Sprinkle with parsley and extra black pepper before serving.
