Creamy Red Onion Potato Salad 🥔🧅
Ingredients
- 6 medium potatoes, peeled and diced
- 1 small red onion, chopped
- 2 green onions, sliced
- 1 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon mustard
- 1 tablespoon lemon juice or vinegar
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 boiled eggs, chopped (optional)
- Fresh parsley for garnish
Instructions
- Boil diced potatoes in salted water until tender, about 10–12 minutes.
- Drain and let cool completely.
- In a large bowl, mix mayonnaise, sour cream, mustard, lemon juice, salt, pepper, and paprika.
- Add potatoes, red onion, green onions, and boiled eggs.
- Gently mix until everything is well coated.
- Chill in the refrigerator for at least 1 hour before serving.
- Sprinkle with parsley and extra black pepper before serving.
Tips
- Add crispy bacon for extra flavor.
- Use Greek yogurt instead of sour cream for a lighter version.
- Best served cold at BBQs or family dinners.
