Ingredients
For the Potato Bake
- 2½ lbs Yukon Gold or russet potatoes
- 2 tablespoons butter, for greasing
- 1½ cups heavy cream
- 1 cup whole milk
- 4 cloves garlic, finely minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves, optional
Instructions
1. Prepare the Potatoes
Preheat your oven to 375°F. Grease a 9×13-inch baking dish generously with butter.
Wash and peel the potatoes if desired. Thinly slice them into approximately ⅛-inch slices. A mandoline can help create even slices, but a sharp knife works well too. Try to keep the slices similar in thickness so they cook at the same rate.
Do not rinse the potato slices after cutting because the natural starch helps thicken the creamy sauce as the casserole bakes.
2. Make the Garlic Herb Cream Sauce
In a medium saucepan, combine the heavy cream, whole milk, minced garlic, thyme, rosemary, Italian seasoning, salt, and black pepper.
Warm the mixture over medium-low heat for about 3–4 minutes, stirring occasionally. Do not bring it to a vigorous boil. The goal is simply to warm the cream and allow the garlic and herbs to infuse their flavor.
Remove from the heat and stir in about half of the Parmesan cheese.
3. Assemble the Bake

4. Bake Until Tender
Bake covered for approximately 45 minutes. Remove the foil and continue baking for another 20–25 minutes.
Sprinkle the mozzarella cheese evenly over the top and return the dish to the oven for another 10–15 minutes, until the cheese is melted, bubbling, and golden brown.
For an especially beautiful golden crust, switch the oven to broil for the final 1–2 minutes, watching carefully so the cheese does not burn.
5. Rest and Garnish
