Ingredients

  • 2 cups cooked chicken, shredded or chopped

  • 1/2 cup mayonnaise

  • 1/4 cup plain yogurt

  • 1/4 cup red onion, finely chopped

  • 1/4 cup red bell pepper, diced

  • 1/4 cup yellow bell pepper, diced

  • 2 hard-boiled eggs, chopped

  • 1 teaspoon lemon juice

  • 1/2 teaspoon dried parsley

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon salt

  • 4 slices toasted bread

Instructions

  1. Cook and cool the chicken if it is not already prepared. Shred or chop it into small pieces.

  2. In a large mixing bowl, add the mayonnaise and plain yogurt. Stir until smooth and creamy.

  3. Add the chopped red onion, red bell pepper, and yellow bell pepper to the bowl. Mix well to combine.

  4. Add the chopped hard-boiled eggs and chicken. Gently stir everything together so the ingredients are evenly distributed.

  5. Add the lemon juice, dried parsley, salt, and black pepper. Mix again until the salad is creamy and well seasoned.

  6. Taste and adjust the seasoning if needed.
