Ingredients

  • 12 Medjool dates
  • 1/2 cup almond flour
  • 2 tablespoons peanut butter or almond butter
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips
  • Pinch of salt

Optional topping

  • Melted dark chocolate
  • Flaky sea salt

Instructions

  1. Slice each date lengthwise on one side and remove the pit.
  2. In a small bowl, mix almond flour, peanut butter, maple syrup, vanilla, and salt until it forms a soft cookie-dough texture.
  3. Fold in the mini chocolate chips.
  4. Stuff each date with the cookie dough mixture.
  5. Arrange on a plate or tray.
  6. Drizzle with melted dark chocolate and sprinkle with flaky sea salt if you want.
  7. Chill for 10 to 15 minutes before serving for the best texture.

Tips

  • If the filling feels too soft, add a little more almond flour.
  • If it feels too dry, add a little more nut butter or maple syrup.
