Cookie Dough-Stuffed Dates
Ingredients
- 12 Medjool dates
- 1/2 cup almond flour
- 2 tablespoons peanut butter or almond butter
- 2 tablespoons maple syrup or honey
- 1/2 teaspoon vanilla extract
- 2 tablespoons mini chocolate chips
- Pinch of salt
Optional topping
- Melted dark chocolate
- Flaky sea salt
Instructions
- Slice each date lengthwise on one side and remove the pit.
- In a small bowl, mix almond flour, peanut butter, maple syrup, vanilla, and salt until it forms a soft cookie-dough texture.
- Fold in the mini chocolate chips.
- Stuff each date with the cookie dough mixture.
- Arrange on a plate or tray.
- Drizzle with melted dark chocolate and sprinkle with flaky sea salt if you want.
- Chill for 10 to 15 minutes before serving for the best texture.
Tips
- If the filling feels too soft, add a little more almond flour.
- If it feels too dry, add a little more nut butter or maple syrup.
- Store in the fridge for up to 5 days.
