Blueberry Banana Oatmeal Cups Recipe
Ingredients
- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1 cup fresh blueberries
- 2 eggs
- 1/2 cup milk
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
- Optional: chopped nuts or chia seeds
Instructions
- Preheat your oven to 180°C (350°F). Lightly grease a muffin tray or line it with paper liners.
- In a large bowl, mash the bananas until smooth.
- Add eggs, milk, honey, and vanilla extract. Mix well.
- Stir in oats, baking powder, cinnamon, and salt until fully combined.
- Gently fold in the blueberries. Save a few for topping.
- Spoon the mixture evenly into the muffin cups, filling each almost to the top.
- Add extra blueberries or banana slices on top for decoration.
- Bake for 25–30 minutes until golden and firm.
- Let them cool for a few minutes before removing from the tray.
Serving Ideas
