🍌 Banana Bread Brownies

 

Soft, moist and delicious banana bread brownies topped with a rich, creamy vanilla frosting. They’re the perfect way to use ripe bananas!

🛒 Ingredients

For the Brownies

  • 2 large egg
  • 3 ripe bananas, mashed
  • 1½ cups granulated sugar
  • 1 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup chopped walnuts or pecans, optional

For the Frosting

  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk or heavy cream
  • Pinch of salt

👩‍🍳 Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.

2. Prepare the wet ingredients:

In a large bowl, whisk together the eggs, mashed bananas, sugar, melted butter and vanilla extract until smooth.

3. Add the dry ingredients:

In a separate bowl, combine flour, baking powder, salt and cinnamon. Gradually add the dry mixture to the banana mixture. Stir just until combined. Don’t overmix.

4. Add nuts:

Fold in chopped walnuts or pecans if desired.

5. Bake:

Spread the batter evenly into the prepared pan. Bake for 25–30 minutes, or until the center is set and a toothpick inserted in the middle comes out with a few moist crumbs.

6. Cool completely:

Let the brownies cool in the pan before adding the frosting.

 

🍦 Make the Frosting

 

1. Beat the softened butter until creamy.

2. Gradually add powdered sugar.

3. Mix in vanilla and a pinch of salt.

4. Add milk or cream, 1 tablespoon at a time, until smooth and spreadable.

5. Spread the frosting evenly over the cooled banana brownies.

🍌 To Serve

Cut into squares and serve at room temperature or chilled. For extra flavor, sprinkle chopped walnuts over the frosting or add a few thin banana slices just before serving.
