Ingredients

  • Greens: 5 cups fresh baby spinach or mixed salad greens

  • Fruit: 1 large red apple (such as Honeycrisp or Gala), cored and thinly sliced

  • Nuts: cup chopped walnuts (pecans also work great)

  • Cheese: cup crumbled feta cheese (or goat cheese)

  • Dried Fruit: cup dried cranberries

Simple Dressing:

  • 3 tablespoons olive oil

  • 1 tablespoon apple cider vinegar (or lemon juice)

  • 1 tablespoon honey or maple syrup

  • A pinch of salt and black pepper

Instructions

  1. Prepare the Base: Thoroughly wash and dry your greens. Place them into a large salad bowl as the base.

  2. Layer the Toppings: Arrange the thin apple slices evenly over the bed of greens. Scatter the chopped walnuts, crumbled feta cheese, and dried cranberries over the top.

  3. Whisk the Dressing: In a small small bowl or jar, combine the olive oil, apple cider vinegar, honey, salt, and black pepper. Whisk or shake vigorously until the mixture is smooth and fully blended.

  4. Toss and Serve: Drizzle the dressing over the salad just before serving. Toss gently to combine all the ingredients so the leaves are lightly coated. Serve immediately while the apples are fresh and crisp.

Tip: To keep the apple slices from turning brown if you are making this ahead of time, toss them in a splash of lemon juice right after slicing.
