Apple Rose Puffs
only 4 main ingredients!
*Yields: 8 roses*
*Ingredients:*
– 1 sheet puff pastry, thawed (about 230g)
– 2 large red apples – Fuji or Pink Lady is best (red skin gives the rose color)
– 3 tbsp apricot jam or melted butter
– 2 tbsp sugar + 1 tsp cinnamon powder
– 1 tbsp lemon juice
– Powdered sugar for dusting
*You also need:* Muffin tray
*Method:*
*1. Prepare the apples (Most Important):*
Wash apples. Cut in half, remove core. Slice VERY thin, almost transparent – about 1-2mm thin, keep the red skin on.
In a bowl, add sliced apples + 1 tbsp lemon juice + 2 cups water. Microwave for 3 minutes until slices are soft and bendable. If no microwave, simmer in water for 2 mins. Drain and pat dry. If they are not flexible, they will break when you roll.
*2. Prepare the pastry:*
Unfold puff pastry on parchment. Roll slightly. Cut into 8 long strips, about 2 inches wide x 10 inches long – just like in your top-left photo.
*3. Make the roses
Brush each strip with apricot jam / melted butter. Sprinkle a little cinnamon sugar.
Arrange 7-8 apple slices overlapping along the top half of the strip, skin side sticking out at the top – half of the apple should be hanging off the pastry.
Fold the bottom half of the pastry up over the bottom half of apple slices.
Now roll it slowly from one end to the other, like you see in top-. You will get a rose shape.
*4. Bake:*
Place each rose in a greased muffin tray so it holds its shape.
Bake at 190°C / 375°F for 35-40 minutes until puff pastry is deep golden and crispy, just like in your bottom photo. If apples start to burn quickly, cover loosely with foil last 10 mins.
*5. Serve:*
Cool 10 mins. Dust with powdered sugar and cinnamon.
So flaky, buttery, and looks like a real rose!
*Tip for perfect roses:* Don’t skip softening the apples. Thin slices + soft = easy rolling and won’t crack.
Tips to get them PERFECT – golden, crispy, and roses that don’t fall apart:
*1. Slice THIN is everything:* If apple slices are thick, they snap when you roll. Aim for 1mm, almost see-through. Use a very sharp knife or mandoline. Keep the red skin on, that’s what makes the beautiful rose edge.
*2. Don’t skip softening:* Your roses will crack if apples are raw. Microwave with water + lemon for 3 mins until they bend like paper. Pat them completely dry after, otherwise puff pastry gets soggy.
*3. The jam is glue:* That apricot jam in the top-isn’t just for flavor – it glues the pastry and adds shine. If you use butter, add 1 tsp jam or honey too, it holds better.
*4. Muffin tray is a must:* If you bake on a flat tray, they open up and become flat. Muffin tray holds the rose shape tight while puffing.
*5. Prevent burnt tips:* Apple skin burns fast. If your oven is hot, bake at 180°C for first 25 mins, then 190°C. Cover with foil if tops get too dark before pastry is cooked.
*6. Work while pastry is cold:* Warm puff pastry becomes sticky and won’t puff. If it gets soft while making roses, put it in freezer 10 mins.
*7. For that photo look:* Dust powdered sugar only after they are fully cooled. If you dust when hot, it melts and disappears.
