*Air Fryer Caprese Stuffed Chicken*
*Serves: 2*
*Ingredients:*
For chicken:
– Chicken breasts – 2 large (about 250-300g each)
– Olive oil – 2 tbsp
– Salt – 1 tsp
– Black pepper – 1/2 tsp
– Garlic powder – 1 tsp
– Paprika – 1 tsp
– Italian seasoning / oregano – 1 tsp
– Chili flakes – 1/2 tsp (optional)
For stuffing:
– Large tomato – 1, sliced into 8 thin slices
– Fresh mozzarella – 120g, sliced (or regular mozzarella)
– Basil pesto – 1 tbsp (optional but makes it extra juicy)
– Balsamic glaze – for drizzle at end (optional)
*Method:*
*1. Prep chicken:*
Wash and pat dry chicken. Make 5-6 deep slits across the top, about 3/4 deep. Don’t cut all the way through.
*2. Season:*
Mix olive oil, salt, pepper, garlic powder, paprika, Italian herbs. Rub all over and inside the slits. Let it marinate 15 mins if you have time.
*3. Stuff:*
Put 1 slice tomato + 1 slice mozzarella in each slit like in your top photo. You can add a little pesto inside too.
*4. Air Fry:*
Preheat air fryer at 180°C for 3 mins. Place chicken in basket (use parchment if you want less mess). Air fry at 180°C / 360°F for 18-22 minutes.
Check at 18 mins — cheese should be melted and top golden like your bottom photo, and chicken inside white, not pink. If still pink, give 3 more mins.
*5. Serve:*
Drizzle balsamic glaze or olive oil and fresh basil on top. Serve hot with salad or garlic bread.
*Tip for juicy chicken:* Don’t overcook. If your breast is very thick, flatten it a little with a rolling pin before slitting.
