Lemon Herb Orzo with Asparagus Feta &Toasted Almonds
Ingredients
The Savory Crepes
1 cup All-purpose flour
2 Large eggs
1 ½ cups Milk (whole or 2%)
2 tbsp Melted butter
Pinch of salt
The Meat Filling
1 lb (500g) Ground beef (lean)
1 Medium onion, finely diced
2 Cloves garlic, minced
2 tbsp Tomato paste (for richness)
½ cup Beef broth (to keep it moist)
Seasoning: 1 tsp Paprika, ½ tsp Salt, ½ tsp Black pepper
The Cheese Sauce (Mornay)
2 tbsp Butter
2 tbsp Flour
1 ½ cups Milk
1 ½ cups Shredded cheese (Cheddar, Monterey Jack, or Mozzarella)
Garnish: Fresh chopped parsley
II. Instructions
1. Make the Crepes
Whisk the flour, eggs, milk, melted butter, and salt until smooth. Let the batter rest for 15 minutes.
Heat a lightly greased non-stick skillet over medium heat.
Pour a small ladle of batter into the pan, swirling it to coat the bottom thinly.
Cook for 1 minute until the edges lift, flip, and cook for another 30 seconds. Repeat until batter is gone. Stack them on a plate.
2. Cook the Filling
Brown the ground beef in a skillet over medium-high heat. Drain excess fat.
Add the onion and garlic; sauté until softened (approx. 5 minutes).
Stir in the tomato paste, beef broth, and seasonings. Simmer for 5-8 minutes until the liquid has mostly reduced, leaving a thick, saucy meat mixture.
3. Make the Cheese Sauce
In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute (don’t let it brown).
Slowly whisk in the milk to avoid lumps. Simmer until thickened.
Remove from heat and stir in 1 cup of the shredded cheese until smooth.
4. Assemble and Bake
Preheat oven to 375°F (190°C).
Lay a crepe flat. Spoon 2-3 tablespoons of meat filling down the center, then drizzle with a little cheese sauce.
Fold it: Fold the bottom up, then the sides over (like an open-ended burrito), or simply roll them tightly as seen in the image.
Place the rolls side-by-side in a greased baking dish.
Pour the remaining cheese sauce over the center of the rolls and sprinkle with the remaining ½ cup of shredded cheese.
Bake for 15-20 minutes until the cheese is melted and golden
