Sweet Potato-Carrot Crispy Fritters  

Makes 8-10 pieces, 25 mins

You’ll need

Fritters:

  • 2 medium sweet potatoes,
  • 1 carrot grated,
  • 1 small onion finely chopped,
  • 2 tbsp besan/maida,
  • 1 tsp red chili flakes,
  • ½ tsp salt, handful coriander + spring onions,
  • 1 egg or 2 tbsp curd for binding

Dip:

  • ½ cup thick curd/hung curd,
  • 1 tsp honey,
  • pinch salt,
  • chili flakes,
  • coriander

Other:

  • Oil for shallow fry,
  • lemon wedges

Quick steps 

Boil + mash: Boil sweet potato, peel, mash. Squeeze out extra water.

Mix: Add grated carrot, onion, besan, chili flakes, salt, coriander. Add egg/curd. Mix till it holds shape.

Shape: Make small round patties. Chill 10 mins if mix feels soft.

Crisp up: Heat 2-3 tbsp oil on medium. Shallow fry 3-4 mins each side till deep golden and crunchy.

Dip: Whisk curd + honey + salt. Top with chili flakes + coriander.

Serve: Hot with lemon wedges. Sprinkle sea salt + coriander on top like the pic.

Tip: Air fryer works too. 180°C for 12-14 mins, flip once.
