Spinach and Feta Puff Pastry Rolls.

1 sheet puff pastry (thawed)

2 cups fresh spinach (chopped)

½ cup feta cheese (crumbled)

¼ cup cream cheese (softened)

1 garlic clove (minced)

1 egg (beaten, for egg wash)

1 tbsp sesame seeds or everything bagel seasoning (optional)

Salt and pepper to taste

Prep the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Cook the Spinach: Heat a tiny splash of oil or water in a pan over medium heat. Add the minced garlic and chopped spinach. Cook for 2 to 3 minutes until the spinach is fully wilted. Remove from heat and let it cool. Squeeze out any excess liquid from the spinach so the pastry doesn’t get soggy.

Make the Filling: In a medium bowl, mix together the cooled spinach, crumbled feta cheese, and softened cream cheese. Season with a tiny pinch of salt and pepper.

Assemble the Rolls: Roll out the puff pastry sheet on a lightly floured surface into a rectangle. Spread the spinach and cheese mixture evenly over the pastry, leaving a small border at the edges.

Roll and Slice: Carefully roll the pastry tightly into a log, starting from the long side. Slice the log into equal pieces (about 1 to 1.5 inches wide) and place them cut-side up on your prepared baking sheet.

Bake: Brush the tops of each roll with the beaten egg wash and sprinkle with sesame seeds if you like. Bake for 15 to 20 minutes, or until the pastry is puffed and beautifully golden brown.
