Description
A rich and creamy keto cheesecake with a buttery almond flour crust, perfectly sweetened without sugar and packed with classic cheesecake flavour.
Ingredients
For the Crust
- 2 cups (200 g) almond flour
- ¼ cup (50 g) granulated keto sweetener (erythritol or monk fruit)
- ½ tsp cinnamon (optional)
- ā cup (75 g) unsalted butter, melted
For the Filling
- 24 oz (680 g) cream cheese, softened
- ¾ cup (150 g) granulated keto sweetener
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- ½ cup (120 ml) sour cream or heavy cream
Instructions
1. Prepare the Crust
- Preheat oven to 325°F (165°C).
- Grease a 9-inch (23 cm) springform pan.
- In a bowl, combine almond flour, sweetener, cinnamon, and melted butter.
- Mix until the texture resembles wet sand.
- Press firmly into the bottom of the pan.
- Bake forĀ 10ā12 minutesĀ until lightly golden.
- Remove and let cool.
2. Make the Filling
- Beat softened cream cheese until smooth.
- Add sweetener and continue mixing until creamy.
- Add eggs one at a time, mixing on low speed.
- Stir in vanilla extract, lemon juice, and sour cream.
- Mix just until smooth. Avoid overmixing.
3. Bake the Cheesecake
- Pour filling over the cooled crust.
- Smooth the top with a spatula.
- Bake forĀ 50ā60 minutesĀ until the edges are set but the center still has a slight jiggle.
4. Cool Slowly
- Turn off the oven.
- Leave the cheesecake inside with the door slightly open for 30 minutes.
- Remove and cool completely at room temperature.
5. Chill
Refrigerate for at leastĀ 4 hours, preferably overnight, before slicing.
