Grilled Chicken Avocado Salad Bowl
✓Ingredients:
•2 chicken breasts
•1 ripe avocado sliced
•1 cup corn kernels cooked or canned and drained
•1 cup cherry tomatoes halved
•1 cucumber diced
•3 cups romaine or mixed greens
•1 tablespoon olive oil
•1 teaspoon paprika
•1/2 teaspoon garlic powder
•Salt and black pepper to taste
✓Ingredients for Dressing:
•3 tablespoons olive oil
•2 tablespoons lime juice or lemon juice
•1 teaspoon honey
•Salt and black pepper to taste
✓Instructions:
Pat chicken dry and season with olive oil, paprika, garlic powder, salt and pepper
Heat a grill pan or skillet over medium high heat and cook chicken for 6 to 7 minutes per side until internal temperature reaches 165 F and grill marks appear
Let chicken rest for 5 minutes then slice
In a large bowl or heart shaped bowl add greens as the base
Arrange sliced chicken, avocado slices, corn, cherry tomatoes and cucumber in sections
For dressing whisk together olive oil, lime juice, honey, salt and pepper
Drizzle dressing over the salad right before serving.
