Cheesy Bacon Ranch Potato Bake

Ingredients

  • 5 cups mashed potatoes
  • 2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and chopped
  • ½ cup sour cream
  • 1 packet ranch seasoning
  • 2 green onions, sliced
  • 1 egg
  • 1 tsp garlic powder
  • Salt & black pepper to taste

Instructions

1. Prepare the Mixture

  • Preheat oven to 375°F (190°C).
  • In a large bowl mix:
    • mashed potatoes
    • sour cream
    • ranch seasoning
    • egg
    • garlic powder
    • half of the cheese
    • half of the bacon
  • Stir until creamy and well combined.

2. Form the Potato Mounds

  • Scoop large spoonfuls of the potato mixture into a greased baking dish.
  • Leave slight space between each mound.

3. Add Toppings

  • Sprinkle remaining cheddar cheese over the top.
  • Add the rest of the bacon pieces.

4. Bake

  • Bake for 25–30 minutes until hot and golden brown on top.

5. Broil for Extra Crispiness

  • Broil for 2–3 minutes until bubbly and lightly crispy.

6. Serve

  • Garnish with green onions.
  • Serve warm with ranch or sour cream.

Tips

  • Use leftover mashed potatoes for best texture.
  • Add mozzarella for extra cheesy pull.
