Ingredients
- 5 cups mashed potatoes
- 2 cups shredded cheddar cheese
- 6 slices bacon, cooked and chopped
- ½ cup sour cream
- 1 packet ranch seasoning
- 2 green onions, sliced
- 1 egg
- 1 tsp garlic powder
- Salt & black pepper to taste
Instructions
1. Prepare the Mixture
- Preheat oven to 375°F (190°C).
- In a large bowl mix:
- mashed potatoes
- sour cream
- ranch seasoning
- egg
- garlic powder
- half of the cheese
- half of the bacon
- Stir until creamy and well combined.
2. Form the Potato Mounds
- Scoop large spoonfuls of the potato mixture into a greased baking dish.
- Leave slight space between each mound.
3. Add Toppings
- Sprinkle remaining cheddar cheese over the top.
- Add the rest of the bacon pieces.
4. Bake
- Bake for 25–30 minutes until hot and golden brown on top.
5. Broil for Extra Crispiness
- Broil for 2–3 minutes until bubbly and lightly crispy.
6. Serve
- Garnish with green onions.
- Serve warm with ranch or sour cream.
Tips
- Use leftover mashed potatoes for best texture.
- Add mozzarella for extra cheesy pull.
