No-Bake Strawberry Mango Cheesecake 🍓🥭
Ingredients
Crust
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 2 tbsp sugar
White Cheesecake Layer
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped topping or whipped cream
Mango Cheesecake Layer
- 8 oz cream cheese
- 1/2 cup mango puree
- 1/4 cup powdered sugar
- 1 tsp lemon juice
- 1 tsp gelatin dissolved in 2 tbsp warm water
- 1 cup whipped topping
Strawberry Cheesecake Layer
- 8 oz cream cheese
- 1/2 cup strawberry puree
- 1/4 cup powdered sugar
- 1 tsp lemon juice
- 1 tsp gelatin dissolved in 2 tbsp warm water
- 1 cup whipped topping
Topping
- Fresh mango cubes
- Mint leaves
- Fresh strawberries (optional)
Instructions
1. Prepare the Crust
- Mix graham cracker crumbs, melted butter, and sugar.
- Press firmly into the bottom of a springform pan.
- Chill in the refrigerator for 20 minutes.
2. Make the White Layer
- Beat cream cheese until smooth.
- Add powdered sugar and vanilla.
- Fold in whipped topping gently.
- Spread over the crust and refrigerate for 20 minutes.
3. Make the Mango Layer
- Beat cream cheese until creamy.
- Mix in mango puree, powdered sugar, and lemon juice.
- Add dissolved gelatin.
- Fold in whipped topping.
- Spread carefully over the white layer.
- Chill for 20–30 minutes.
4. Make the Strawberry Layer
- Beat cream cheese until smooth.
- Add strawberry puree, powdered sugar, and lemon juice.
- Mix in dissolved gelatin.
- Fold in whipped topping.
- Spread on top of mango layer evenly.
5. Chill
- Refrigerate the cheesecake for at least 6 hours or overnight until fully set.
6. Decorate & Serve
- Top with diced mango, strawberries, and mint leaves.
- Slice and enjoy cold!
