Fresh, protein-packed, and full of flavor β this salmon salad is perfect for lunch or dinner! πͺπΏ
π Ingredients:
1 salmon fillet π
2 eggs π³
2 cups fresh spinach πΏ
1/2 cup cherry tomatoes π (halved)
1/2 cucumber π₯ (sliced)
1/4 red onion π§ (thinly sliced)
6β8 olives π«
2 tbsp feta cheese π§
1 tbsp olive oil π«
1 tbsp lemon juice π
Salt, black pepper & chili flakes πΆοΈ

Season salmon with salt, pepper, and chili flakes πΆοΈ.
Sear in a hot pan with olive oil for 3β4 minutes per side until golden and cooked through ππ₯.
Boil eggs for 7β8 minutes, peel, and slice in halves π³.
In a bowl, combine spinach, tomatoes, cucumber, onion, olives, and feta π₯.
Drizzle with olive oil and lemon juice πβ¨.
Top with salmon and eggs. Sprinkle extra chili flakes if you like heat πΆοΈ.
