๐ฅ Greek Salad with Yogurt Dressing
๐งพ Ingredients
For the salad:
- 2 cups cucumber (chopped)
- 1 cup cherry tomatoes (halved)
- ยฝ red onion (thinly sliced)
- ยฝ cup black or Kalamata olives
- 150โ200g feta cheese (cubed or crumbled)
- 1 green bell pepper (optional, sliced)
For the yogurt dressing:
- 1 cup thick plain yogurt (Greek yogurt works best)
- 1โ2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tbsp lemon juice (or vinegar)
- 1 tbsp fresh dill or mint (chopped, optional)
- Salt (to taste)
- Black pepper (to taste)
๐จโ๐ณ Instructions
1. Prepare the vegetables
- Wash and chop all vegetables.
- Place cucumber, tomatoes, onion, olives, and pepper into a large bowl.
2. Make the yogurt dressing
- In a separate bowl, mix:
- Yogurt
- Garlic
- Olive oil
- Lemon juice
- Herbs
- Salt & pepper
- Stir until smooth and creamy.
3. Assemble the salad
- Add feta cheese to the salad bowl.
- Pour the yogurt dressing over the salad.
- Gently toss everything together.
4. Serve
- Sprinkle a little oregano or drizzle olive oil on top (optional).
- Serve chilled with bread or pita.
