  • 3 cups flour
  • 1½ tsp salt
  • ¼ tsp yeast
  • 1 cup + 2 tbsp warm water

1. Make Dough

Mix flour, salt, and yeast.
Add water and mix → sticky dough is OK.

2. First Rest

Cover and leave for 12–18 hours at room temperature.
Dough will rise and show bubbles.

3. Add Cheese

Put dough on a floured surface.
Add cheese and fold the dough gently.

4. Second Rest

Place dough on baking paper.
Cover and rest for 1–2 hours.

5. Preheat

Heat oven to 230°C (450°F).
Keep Dutch oven inside while heating.

6. Bake (Covered)

Put dough in hot pot.
Cut top slightly.
Bake 30 minutes with lid.

7. Bake (Uncovered)

Remove lid and bake 12–15 minutes more until golden brown.

8. Cool

Let bread cool for 45 minutes before cutting.
