Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tsp instant yeast
  • 1 cup warm milk
  • 2 tbsp melted butter
  • 1 egg
  • Cornmeal for dusting

Instructions

1. Prepare the Dough

  • In a large bowl, mix warm milk, sugar, and yeast.
  • Let sit for 5 minutes until foamy.
  • Add egg, melted butter, salt, and flour.
  • Knead for 8–10 minutes until soft and smooth.

2. First Rise

  • Place dough in a greased bowl.
  • Cover and let rise for 1 hour until doubled.

3. Shape Muffins

  • Roll dough to about ½-inch thickness.
  • Cut circles using a biscuit cutter or glass.
  • Sprinkle trays with cornmeal and place muffins on top.
  • Dust tops lightly with more cornmeal.

4. Second Rise

  • Cover and rest for 30 minutes.

5. Cook

  • Heat a skillet or griddle over low-medium heat.
  • Cook muffins 6–8 minutes per side until golden brown and cooked through.

6. Serve

Split with a fork and enjoy with:
