 *Soft Apple Cake* – super moist, fluffy and full of apples inside:

 

*Ingredients:*

 

– 3 medium apples (sweet apples like Gala / Golden)

– 2 cups all-purpose flour (250g)

– 3 large eggs (room temperature)

– 3/4 cup sugar (150g)

– 1/2 cup unsalted butter (100g) melted, or 1/2 cup vegetable oil

– 1/2 cup milk (120ml)

– 2 tsp baking powder (10g)

– 1 tsp vanilla essence

– 1/2 tsp cinnamon powder (optional)

– Pinch of salt

– Powdered sugar for dusting on top

 

*Method:*

 

*1. Prep Apples:*

Peel apples, cut in half, remove seeds. Slice thinly like in the pic. Squeeze a little lemon juice on them so they don’t turn brown.

 

*2. Make Batter:*

In a bowl, beat eggs + sugar for 3-4 minutes until light and fluffy.

Add melted butter, milk, vanilla and mix.

In another bowl, mix flour + baking powder + salt + cinnamon.

Add dry mix to wet mix and fold gently. Don’t overmix, otherwise cake will be hard.

 

*3. Add Apples Inside:*

Chop 1 apple into small cubes and mix into the batter – this is the secret for that juicy inside .

 

*4. Assemble:*

Line a 8-inch round pan with butter paper. Pour batter in.

Arrange the thin apple slices on top in a circle . Press them slightly down.

 

*5. Bake:*

Bake in preheated oven at 180°C (350°F) for 40-45 minutes.

Check with a toothpick – if it comes out clean, it’s done. If top turns brown too fast, cover with foil for last 10 mins.

 

*6. Finish:*

Let it cool for 20 mins. Dust generously with powdered sugar.

Tips for this *Soft Apple Cake*

 

*1. The Right Apples:* Use sweet & firm apples like Gala, Fuji, Honeycrisp. Sour green apples will make the cake watery. Don’t use soft, mealy apples.

 

*2. Don’t Slice Too Thick:* Cut the top decoration slices very thin – 2-3mm. Thick slices sink and make the cake soggy. Thin slices stay on top .

 

*3. No Overmixing:* After you add flour, just fold gently until combined. If you beat too much, cake will be hard and rubbery, not soft and fluffy like your slice.

 

*4. Secret for Moist Inside:* Mix small apple cubes INSIDE the batter. That’s why your slice looks so moist and studded with apple pieces. If you only put apples on top, inside will be dry.

 

*5. Oven Check:* Every oven is different. After 35 mins, check. If toothpick has wet batter – give 5-8 mins more. If top is browning fast but inside is raw, cover with foil and continue baking.

 

*6. Let It Cool:* Don’t cut hot! Wait at least 20-30 mins. Hot apple cake breaks easily. It sets and becomes more moist as it cools.

 

*7. Extra Flavor:* Brush a little melted apricot jam on top right after baking for that shiny bakery look, then dust powdered sugar.
