 3-Layer Salted Chocolate Caramel Cookie Dough Bars

 

*Makes 16 bars – 8×8 inch pan*

 

*INGREDIENTS:*

 

*1. Cookie Dough Bottom Layer:*

– 1 cup almond flour OR 1 1/4 cup all-purpose flour (heat-treated in microwave 1 min)

– 1/2 cup (113g) soft butter

– 1/2 cup brown sugar

– 1/4 cup white sugar

– 2 tbsp milk

– 1 tsp vanilla extract

– 1/2 cup mini chocolate chips

– Pinch of salt

 

*2. Salted Caramel Middle Layer:*

– 1 cup peanut butter OR thick caramel / dulce de leche

– 1/4 cup honey / maple syrup

– 2 tbsp melted coconut oil or butter

 

*3. Chocolate Top Layer :*

– 1 1/2 cups dark chocolate chips

– 2 tbsp coconut oil

– Flaky sea salt to sprinkle

 

*METHOD:*

 

1. *Base:* Beat butter + sugars until fluffy. Add milk, vanilla. Mix in flour and salt. Fold in choc chips. Press into lined pan. Freeze 20 mins.

2. *Caramel:* Whisk peanut butter + honey + oil until thick and smooth. Spread over base. Freeze 15 mins.

3. *Topping:* Melt chocolate chips + coconut oil in microwave (30 sec x 2, stir in between) until glossy Pour over middle layer, spread.

4. *Finish:* Sprinkle sea salt right away. Chill 2 hours in fridge, then cut into thick squares like your bottom

 

So fudgy, salty-sweet, and no oven needed!

Crispy Ham & Cheese Bites

*1. The Crispy Bun Trick:* Those golden buns are NOT bread. It’s a mix of 1 cup shredded chicken OR cauliflower rice + 1 egg + 1/2 cup mozzarella + 2 tbsp almond flour. Mix, make small patties, and air fry / bake at 200°C for 12-15 mins until golden. That’s how you get that crispy edge

 

*2. Don’t let cheese burst:* Place 1 slice ham + 1 small slice mozzarella in the center, not to the edge. Leave a border so when you close it with the top patty, cheese stays inside.

 

*3. For that bubbly cheese top:* Use shredded mozzarella, not slices on top. Add it in the last 3 minutes of baking. Broil for 1 min at the end to get those brown spots .

 

*4. Keep them from getting soggy:* Line the glass dish with parchment. Don’t cover with foil while hot – the steam makes them soft. Sprinkle parsley/chives AFTER baking, not before.

 

*5. Make ahead:* You can make the bottom patties a day before and keep in fridge. Assemble and bake when guests arrive – 10 mins and you have that hot melty .
